This past Sunday was going to be one of the last big Sunday dinners my family would be having for a while, my sister was moving to school and I was moving out(see Monday's post for what happened).
As a 'last supper' as it were I decided to make a out of the ordinary meal, Jamaican Sunday dinners are pretty standard, with rice and peas, chicken, and veggies along with salads, but I wanted to go Italian. I got bread from our local Italian restaurant *amazing*, and hid it in the freezer for Sunday.
As for the Cajun chicken I got the idea from the restaurant I used to work in many years ago, which had the most amazing food, I used to buy the blackening seasoning by the packet and have it at home t use, since I no longer work at the restaurant, I thought why not try to make my own version of this meal and see what happens, what happened was a delicious meal was had, where we laughed, talked, lingered and enjoyed the meal so much that there were NO leftovers.
Here's how my version of this meal went:
Ingredients:
6 large boneless chicken breast
Cajun Seasoning:
2 Tbsp Mrs. Dash Original flavor
1 tsp Paprika, chili powder, garlic powder, onion powder
1/4 tsp black pepper

Here's how my version of this meal went:
Ingredients:
6 large boneless chicken breast
Cajun Seasoning:
2 Tbsp Mrs. Dash Original flavor
1 tsp Paprika, chili powder, garlic powder, onion powder
1/4 tsp black pepper
Directions:
- Mix the cajun seasoning and set aside
- Get your chicken and use the knife and cut slits into the chicken deep enough to allow the seasoning to get into the chicken
- Season the chicken with the cajun seasoning and allow to sit for a few minutes
- Place on a baking dish, brush the baking dish with olive oil, set chicken on the dish arranging so there is space between the chicken,
- Place a small amount fo water, just enough to cover the bottom of your baking tray, cover the chicken and place in over at 375 degrees.
- Once the chicken is cooked about 20 mins, take out and cut up, into bite size pieces:
- While the chicken is in the oven work on the alfredo sauce, boil your linguine at this time as well
- I used a jar and jalf of Classico Alfredo sauce original recipe, 1/2 cup of fresh parmesan cheese (as in I grated it, not the powdered stuff), 1 1/2 cups of milk, 2 Tbsp butter.
- heat the saucepan with the butter until it melts, add in the jarred sauce, allow to heat stirring well
- Slowly add in milk stirring the whole time, once all milk is added in allow to come to a boil
- Add in parmesan a little at a time stirring while doing so, once all of cheese is added in turn down stove and allow to simmer
- ADD IN CHICKEN JUST BEFORE YOU SERVE AND STIR WELL
Serve over pasta and enjoy!!!!
