KWW: Paella



Hello Readers
I haven't done one of these in a while, so I thought I would share last night's dinner. Today's recipe is a Mediterranean  One Pot feast of the senses.  it's Paella, now there are many different versions of this recipe, but this is one of my favorite versions. This also makes a great use it instead of waste it meals, one of my best girlfriends makes this whenever she has left over chicken in her fridge.


Ingredients:
3 cups rice
3 cups chicken, cubed
5 cups chicken broth or water
1 medium onion
3 cloves garlic
2 escallions (green onion)
1/2 cup olive oil
2-3 sprigs of fresh rosemary (1-2 tsp of dried rosemary)
12 or more clams or mussels (cleaned and de-bearded) *can be fresh or prepackaged qucik heat* 
1-2 filets of white fish (tilapia, whiting, or flounder works well)
1 1/2 cups shrimp *precooked works fine*
1 cup diced tomatoes
1 cup peas (corn) *frozen works fine*
1 1/2 cups chopped beans *frozen works fine*
Saffron (or 1 packet Sazon' Goya seasoning if you can't find saffron)
1 tsp each pepper, sage, marjoram, 
Salt to taste (optional)
Sausage (optional) * can replace the fish for this*.
Directions:

  • Chop up seasonings and set aside, chop up meats & fish and set aside
  • Heat 1/2 cup olive oil in a deep pan, once heated add in onion & garlic, cook until translucent, add in chicken. Stir often until chicken is partially cooked (if adding in sausage add in now and cook with chicken)~~ about 10 mins
  • To this add tomatoes, beans, and peas/corn, stir well and allow to cook ~~ 10 mins
  • Add in chicken broth/water ~~ Bring to boil
  • Once boiled add in saffron/Sazon ~~ allow to cook about 10 mins
  • KEEP STIRRING
  • Add in seasonings, and mix well add in rice and STIR well
  • Cover and turn down to med/low heat, allow rice to cook
  • Once rice has soaked up most of the water, add in cooked shrimp & your fish~~ cover and allow to finish cooking
In the meantime in a separate pot:
  • If using fresh clams/mussels: add 2 cloves garlic to 2 tbsp butter and allow butter to melt, stir the garlic to prevent burning,  toss in mussels/clams and cover down, shake  and allow them to pop open, 
  • Quickly remove those that have opened. And add more until all desired are open, toss any that don't open.
  • If using packaged mussels/clams follow the instructions found on the package on how to prepare.
  • set aside until the end of the meal
Once the main dish is ready you can add in the clams/mussels last and stir well or you can add the mussels/clams last arranged around the dish.
Here is my serving for two.
